Malabar egg curry


Ingredients

Eggs - 4
Onions - 3 medium
Tomatoes - 2
Green cillies - 2
Garlic-ginger paste - 2 tsp
Chilly powder - 1 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 2 or 3 tsp
Oil - 1 tblsp
Thick Coconut milk  - 1 cup
Garam masala - 1/4 tsp
Salt - to taste
Curry leaves  - a few

Method

1.Boil and de-shell the eggs and cut into two

2.Heat oil in a pan and fry the chopped onions till it changes colour

3.Add the ginger-garlic paste along with tomatoes

4.Add the powders and mix well

5.Pour a half cup of water and cook the tomatoes 

6.Pour the coconut milk and add the boiled eggs and bring it to boil

7.Add the green chillies and curry leaves when the oil starts to seperate

8.Cover the curry and simmer for few minutes

9.Remove from heat and serve
